Specialty Recipes

Minnesota celebrates its 150th anniversary in 2008. As a part of the festivities, the Sesquicentennial Commission recruited volunteers to compile a Minnesota cookbook. They want this book to reflect what we eat and how we dine in the 21st century. Below are two recipes from Whitefish Area residents that will appear in the book.

Blueberry Muffins
1/2 cup butter or margarine
1 1/4 cup sugar
2 eggs
1 cup sour cream or plain yogurt
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups flour
2 cups blueberries

Cream butter and sugar. Add eggs and beat until smooth. Mix in sour cream and vanilla. Combine dry ingredients and stir into creamed mixture. Fold in blueberries. Spoon into muffin tins that are either lined with paper liners or sprayed with oil. Bake at 375 until golden brown about 25-35 minutes. Makes 16 large sized muffins. By John Wallin, Pequot Lakes
